This special Sicilian pasta is made from twisting the semolina dough around a thin wooden rod called a Ferro. We suggest pairing this pasta with a traditional Sicilian trapanese pesto. This pesto replaces much of the basil with tomatoes and lets garlic, EVOO, and pecorino romano do the rest!
